Quick Bruschetta

Easy and simple, and modifiable to accommodate various tastes. I make these with fancy whole grain breads or white parisian-type baguette, with fresh chopped garlic or organic garlic from the jar, with cherry tomatoes or salsa…You can use any type of cheese you want or omit it completely. You choose what suits your fancy!

For these, I used:

– white sub buns available at most grocery stores
– cherry tomatoes, chopped
– olive oil
– chopped garlic from a jar
– frozen Thai basil (from my own garden)
– a sprinkle of coarse sea salt
– Monterey jack cheese, shredded (or grated), optional


Slide the bread into thin sections and lay out on a baking sheet (or toaster oven sheet).

In a bowl, mix all of the ingredients except the cheese and let sit for a few minutes (or make in the morning and marinate until lunch, for example).

With a spoon, drizzle generous spoonfuls of the mixture onto each slice of bread and spread around with the back of the spoon.

When bowl is empty but still has oil in it, drizzle oil on top of the slices of bread topped with the mixture.

Sprinkle cheese, if using on top of slices of bread with mixture.

Toast briefly at 350-375 degree F oven for 2-5 minutes (until the cheese is melted and the bread looks toasted).

Enjoy as a light lunch with a salad, or as an appetizer or snack.
