Summer cooking is so easy. Lunch is easy. This is a pretty standard lunch for us. The chunky salmon comes from a can and is tossed with a yoghurt and mayonaise sauce, and just a touch of sea salt. Some fresh herbs like chives, parsley or chervil are always nice to add when on hand, as is dill. The avocado has a sprinkling of lime juice on it so it won’t brown as fast. The rest? Easy peasy.
